Shakshuka - Oriental vegetable soup with eggs

Ingredienst for 4 Portions 

600 g Tomato (n) the fully ripe, perhaps, from a can
n. B. Olive oil
6 Spring onion (s)
4 Garlic clove (s) sliced,
1 tsp, crossed out Cumin
1 pinch Cayenne pepper or chili flakes
Salt and pepper
4 Egg (s)
3 tablespoons Parsley, smooth, fresh or
Coriander leaves



Preparation

Heat the olive oil in a frying pan and fry onions, garlic and cumin. Add the tomatoes, cayenne pepper, salt and pepper (if the tomatoes are not sweet enough, add maybe a half teaspoon sugar). Ca. 15 min. simmer until the tomatoes cooked but not completely disintegrate are. 

4 eggs evenly over the remaining ingredients, beat in the pan. Protein Fluff with a fork and 1 - 2 min. can falter. Sprinkle with parsley and cilantro. Serve with white bread. Also like to extend to either hummus.
